Recipe Thread

Okay, I know you all like to eat! Who has tried and true recipes they haven't shared? I'm bored with my usual ones and am always on the lookout. I'll show you mine if you show me yours! Nothing too fancy please. Let's help each other with meals (main dishes and more) which we find ourselves cooking up time & time again.

Here's a one dish meal that I make a lot. It's from Matt's Slovak mom.
Halushki:
1 head cabbage
1 onion
1 box bowtie pasta
butter
salt
pepper
kielbasa (optional)

Here's how I make it:

Slice kielbasa (we use the turkey kind a lot) into small disks and place in pan on low heat, stirring occasionally.

Thinly slice onion and add to pan (you might need to add some butter or oil to sautee). Sautee over medium heat until translucent.

Cut cabbage into thin slices (basically shredded into very thin, long strands) or however you like it and add to pan. You may need to add the cabbage in batches as it wilts down. Continue stirring.

Prepare pasta according to box directions (we've been low-carbing so we just leave it out).

Once pasta is cooked and cabbage has wilted and turned golden, add pasta to cabbage mixture and add lots of pepper, butter & salt to taste.

Simple, but delicious. I cut the kielbasa up so you get meat in almost every bite and the flavor of the meat goes all through the cabbage. You can cook it whole on your grill or do whatever you prefer. You can change it up by using different meat, or no meat at all. Don't knock it until you've tried it. Cabbage turns very sweet this way and most people like it.

That sounds soo good! I make the same dish with ground beef and some parm. cheese, how funny. I have only a couple of tried and trues.

MY Potroast

4-6 lb. pot roast
1 can beef broth
1 envelope of Lipton Soup (I use Golden Onion)
1 12 oz. beer, I use Steel Reserve 211, lol but any dark beef would be awesome


Mix everything together and cook in a Crockpot on Low for 10 hours!!

Then reserving all liquid- remove meat, shred and set aside.

Mix about 2 TBSP flour and 1 1/2 TBSP of COLD water into a "Elmer's Glue" consistency in a small bowl with a fork.

Slowly stir glueish mixture into liquid in Crockpot. Stir until slightly thickened, add the meat back in.

Cook for an additional 20 minute to blend. Serve with rice or mashed potatoes.

This is definitely the BEST roast.

Good idea! I love my crockpot too. My absolute FAVORITE thing to make in it is Johnny Harris BBQ Chicken. Take chicken breast and cover with a bottle of Johnny Harris BBQ sauce (they have it at Harris Teeter and at the gourmet shop way out in White Stone at the river, so you might find it where you least expect it - they also sell it online). I use 1 bottle for 1 pkg of chicken. Add a little water to cover if necessary.

The longer you crock it the better. When it's super tender, I take the pieces out and reduce the sauce 'til it's thick. Sometimes I'll add a little sweet BBQ sauce or ketchup to balance out the sour in the sauce.

With two forks, pull the chicken pieces apart. Plop chicken onto buns (potato rolls rock with this) and douse with extra sauce. Yum!

Steak Diane for Two

Time: 20 Minutes
2 6-ounce beef fillets, cut from the tenderloin (filet mignon), preferably
not too lean
Salt and pepper
1 tablespoon extra virgin olive oil
2 tablespoons butter
1 tablespoon minced shallot or onion
1 teaspoon Dijon mustard
1 teaspoon Worcestershire sauce, or to taste
½ cup heavy cream or half-and-half
Lemon juice to taste, optional
Chopped fresh chives or parsley leaves for garnish.
1. Flatten fillets a bit with the palm of your hand, the back of a skillet
or a small mallet; they should be about 1 inch thick. Sprinkle with salt and a
lot of pepper. In small skillet, preferably one just large enough to hold
fillets, combine oil and tablespoon of butter over medium-high heat. When
butter foam melts, sear steaks on both sides, just until browned, no more than 2
minutes a side. Remove to platter.
2. Wipe pan clean with towel; add remaining butter over medium heat, with
shallot or onion. Cook, stirring occasionally, until tender, about 2 minutes.
Stir in mustard, Worcestershire and cream. Add some salt and a fair amount of
pepper. Stir once or twice, then taste and adjust seasoning.
3. Keeping mixture at a steady simmer, return meat and accumulated juices to
pan. Cook, turning two or three times, until meat is done to your liking,
just 1 or 2 minutes a side for medium-rare. Remove to a plate, and add lemon
juice, if using, salt and pepper to the sauce as needed. Spoon sauce over meat,
garnish with chives or parsley, and serve.
Yield: 2 servings.

Do you know what is so excellent? I was trying to think of something good to make this weekend since it's going to be cold at the river. I thought I'd make a potroast (I have never made one having, you know, not eaten meat for 15 years.). Anyway, VOILA. Here's Julia's pot roast recipe for me to try out! Thanks!

Well, Julia's Potroast is in the slow cooker right now. I made it from my pantry so there are a couple little substitutions I had to make - I used chicken broth with beef boullion (I know that spelling's got to be wrong, I don't think I've ever typed it before). I had a full random onion dip mix and I used a full bottle of Amber Bock beer. I tossed in two bay leaves since Andy got me an extravagant spice set for Christmas and I thought it would be nice to use something besides the cinnamon and garlic :). It's set for 8 hours (3 lb roast). Fingers crossed!

Tried n' True Crockpot recipes from one of my online groups:

Crockpot Chicken W/ Blackbeans and Cream Cheese
4-5 boneless chicken breasts
1 can black bean
1 can corn
1 jar salsa , any kind (16 oz)
1 8 oz package cream cheese
1. Take 4-5 frozen, yes, frozen, boneless chicken breasts put into crockpot.
2. add 1 can of black beans, drained, 1 jar of salsa, 1 can of corn drained.
3. Keep in crockpot on high for about 4-5 hours or until chicken is cooked. Or cook on low all day.
4. Add 1 package of cream cheese (just throw it on top!) and let sit for about 1/2 hour.
5. All done and enjoy! I shred the chicken and serve with tortillias.

4 servings
4 hours 3 minutes ( 3 mins prep time, 4 hours cook time )

Crockpot Chicken Noodle Soup
1/2 large Onion -- sliced
2 Carrot -- sliced
2 Celery stalks -- sliced
4 ounces Mushrooms
2 teaspoons Salt
1/2 teaspoon Pepper
1/4 teaspoon Thyme
3 boullion cubes
Chicken pieces – I used 1 breast and 1 leg (with bones) (or use boneless/skinless chicken breasts)
5 cups – Water
10 ounces Peas -- frozen
1 bag Frozen egg noodles

Place all ingredients in crockpot, except noodles and peas, in order listed. Cover and cook on LOW 8 hours (HIGH 4 hours). Debone and cut up chicken. Add noodles and peas. Cook on HIGH another 1/2 to one hour until noodles are cooked.

PEPPERONCINI BEEF

3-4 lb roast (anything on sale)
1 jar Pepperoncinies (usually found in the Pickle asile at the grocery store)

Hoagie Rolls
Provolone cheese
Garlic Butter

Put roast into crockpot and pour pepperoncinis and liquid over roast, cook on low 6-8 hrs or until falling apart.

To serve as sandwiches: butter hoagie buns with garlic butter. Top one half of the bun with roast beef and peppers and top with cheese. Place sandwiches under preheated broiler until toasted.

Crock Pot Pork Chops
4 Pork chops
1 pkg frozen hash browns
1 cup sour cream
1 can of cream of chicken soup
1 cup cheddar cheese
1/2 cup milk
French's Fried Onions -about half of large can

Mix hashbrowns, sour cream, soup, cheese and milk together in a crock pot. Put the pork chops on top and let it cook on low all day. About a half hour to hour before eating put some Fried onions on top of the pork chops.

This one is pretty rich, you may want to use less sour cream \ cream of chix soup.

Crockpot TACO SOUP

2LB ground beef
1 medium onion, finely chopped
1 28oz can crushed tomatoes
1 15oz can tomato sauce
1 cup water
1 15oz can whole kernel corn, drained
1 15oz can pinto beans
1 15oz can kidney beans
1 envelope of taco seasoning mix

Garnishes
Shredded cheddar cheese
sour cream
Corn or Tortilla chips

In a large skillet, brown beef and onion, drain. Add to crock pot. Add tomatoes, tomato sauce, water, beans, corn, and taco seasoning mix. For best flavor, cook all day on low setting. Can also cook for 4 hours on high if short on time!

Cream cheese chicken

1 lb boneless skinless ch. breasts
1 packet italian dressing dry seasoning
1 Tblspn butter

Put all in crockpot and cook on low all day or high for about 5 hours. Shred chicken and keep juice.

In saucepan combine 1 package cream cheese, 1 can cream of chicken soup. Stir until creamy and add to chicken. Stir and add peas, mushrooms, or any veggie of choice. Serve over rice.

Honey Dijon Pork Tenderloin

2 lbs pork tenderloin
1/2 tsp. salt
1/4 tsp. black pepper
1/2 c. balsamic vinegar
3 T. honey
1 T. Dijon mustard

Trim fat from tenderloin. Sprinkle w/salt and pepper. Place in stoneware. In a small bowl, combine remaining ingredients, brush on top and sides of tenderloin. Pour remaining sauce mixture on top of tenderloin. Cover and cook on low 8 hours (4 hours on high).

Split Pea Soup
10 cups water
1 pound dried split peas (about 2-1/4 cups)
1 to 2 pounds smoked ham cut into pieces or a ham bone
1 medium onion
1 tsp salt
1/4 tsp pepper
2 or 3 carrots chopped
2 or 3 stalks celery chopped

Boil the peas in the 10 cups, then let it sit for an hour. Put it all in the crock-pot and let it cook!

Chicken Cacciatore with Spaghetti

*2 onions, sliced
*4 - 6 chicken breasts (calls for 2 1/2 - 3lbs chicken legs, but I like the breast meat better)
*2 garlic cloves, minced
*16-oz can stewed tomatoes
*8-oz can tomato sauce
*1 tsp salt
*1/4 tsp pepper
*1-2 tsp. dried oregano
*1/2 tsp. dried basil
*1 bay leaf
*1/4 cup white wine (it works well without this too!)

*Place onions in bottom of crockpot
*Lay chicken over the onions
*Combine remaining ingredients and pour over the chicken
*Cover, cook on low for 6 to 6 1/2 hours
*Remove bay leaf.
*Serve over hot buttered spaghetti, linguini, or fettucini

i have 2 recipes that the family loves

tomato soup stew
2 packages of stew meat
2 potatoes pealed and chopped up
1 package baby carrots
1 big jar or 3 small jars of tomato soup 1 can of water
salt and pepper to taste
cook this all day i usually make it by 9am and its ready to eat at 5:30-6
(you can add onions to this - my hubby hates onions so i dont add them)


green beans and ham
1 ham steak cut in bite size pieces
1 package of carrots
2 cans green beans undrained
2 potatoes pealed and chopped
(1 chopped up if you want)
1 box or big jar of chicken broth

i usually dont add the ham till an hour or so before serving so it doesnt loose all its flavor

this meal i also cook all day - or if you get in a pinch this meal only takes about an hour on the stove.

~Easy roast

1 roast

1 can Pepsi or Coke (regular)

1 package Onion soup mix

1 can cream of mushroom soup

- brown roast in pan

- place roast in crockpot

- add soup, soup mix, and pour soda on top

- cover and cook


~Chicken Cacciatore

1 15 oz can of tomato or spaghetti sauce

1 4 oz can sliced mushrooms, drained

1/2 cup water

1 tsp dry chicken broth granules

1/2 tsp Italian seasoning

- Place chicken in slow cooker

- pour on sauce, mushrooms, and water

- sprinkle with granules and seasoning

- cover and cook

serve with rice

Cheesy Crockpot Chicken

1 bag of frozen boneless, skinless chicken breasts
1 can cheddar cheese soup
2 cans cream soup (you choose - I like Mushroom)

Place frozen chicken in crockpot. Pour soups(I usally mix them together first) over chicken. Cook on low 8 hours or high 4 hours.

Crockpots are a wonderful thing!

Mile-High Enchiladas

Hamburger meat
onion
kidney beans
black beans
green chilis
corn tortillas
lots of cheese
picante sauce

Brown hamburger meat with chopped onions

Take corn tortillas and create a layer on the bottom of the crock pot. Then layer in some meat, some of the beans, and some green chilis. Pour some picante sauce over it and top it with cheese. Repeat this layer until you have used all the ingredients. Let it cook on high for about an hour and a half.

You can also do this with chicken and add you own ingredients. I have added corn and pinto beans and even Ranch style beans because it was all I had!

My Chicken Vegetable Soup

2-3 Chicken breasts cut into bite size pieces
2 large or 6 sm cans of red sodium chicken broth
3-4 stalks celery chopped
1.5 cup (or more) of chopped carrots
Can of diced stewed tomatos
Can of drained Green Beans (could use frozen)
Can of drained Corn
Zucchini or and veges you have laying around
2-3 potato chopped into cubes (I leave skin on)

Basil
Oregano
Bay leaves

Quickly saute carrots/celery seasoned with salt/pepper add to crock pot with broth, basil, oreganp and 2 bay leaves. Add chicken and potatos too. May want to chop veges night b4. Cook on low all day 30 min b4 you want to eat toss in corn/green beans and zuchinni. Add can of tomatoes with juice.

Paired with bread and/or rolls is so yummy. You can do this in a hurry on the stove top just saute celery/carrots a little longer add to pot with potatos when potatos are fork tender add other stuff.

Sometimes I use barley or pasta instead of potatos. Makes great leftovers the next day!!

Beef Brisket:
1 beef brisket
2 cans coke or pepsi (regular)
2 packets onion soup mix
2 jars of Chili Sauce (found near ketchup in groc store)
Cook on low for 8 hours. I serve with homemade mashed pototoes.


Random Chicken Recipe:
Boneless skinless chick breasts (can be frozen)
Can of Southwestern Cheese Campbells soup
Cook on low 8 hours.
I Serve this one over rice.

Another random Chicken:
Boneless Skinless Chick breasts (can be frozen)
Jar of salsa
Cook on low 8 hours.

Another random chicken"
Boneless skinless chick breasts (can be frozen)
Can of cream of mushroom soup with roasted garlic (another campbells creation!)
Cook on low 8 hours.

Fun Football Nacho Dip
1 lb ground beef browned and drained
1 can hormel chili
1 velveeta cheese log
1 jar salsa
Cook until hot. Serve with chips as a dip. It's incredible!

Italian Tortellini Stew
1 small onion, finely chopped (I'd saute it first, but that's just me)
2 medium zucchini, halved and cut in 1-inch slices
2 14 1/2 oz. cans ready-to-serve vegetable broth
1 28 oz. can crushed or diced tomatoes
1 15 1/2 oz. can of great northern beans drained and rinsed
1/4 tsp. salt
1/4 tsp. pepper
1 Tablespoon dried basil leaves
1 8 oz. pkg. uncooked dry cheese-filled tortellini

Combine all ingredients except basil and tortellini, mix well.

Cover and cook on low setting for 6 to 8 hours

About 20 min. before serving, stir basil and tortellini into stew. Increase heat setting to high; cover and cook an additional 20 minutes or until tortellini are tender.

8 (1 1/4 cup) sevings
For weight watchers, one serving equals 3 points!!!

CREAMY SPAGHETTI CROCKPOT RECIPE

1 cup chopped onions
1 cup chopped green peppers
1 tablespoon olive oil
1 can (28-oz. size) tomatoes with juice
1 can (4-oz. size) mushrooms, chopped and drained
1 can (2 1/4-oz. size) sliced ripe olives, drained
2 teaspoons dried oregano
1 pound ground beef, browned and drained
12 ounces spaghetti, cooked and drained
1 can (10 3/4-oz. size) reduced­ sodium, 98 %-fat-free cream of mushroom soup
1/2 cup water
1 1/2 cup shredded fat-free cheddar cheese
1/4 cup freshly grated Parmesan cheese


Saute onions and green peppers in olive oil in skillet until tender. Add tomatoes, mushrooms, olives, oregano, and beef. Simmer for 10 min­ utes. Transfer to slow cooker.

Add spaghetti. Mix well.

Combine soup and water. Pour over casserole. Sprinkle with cheeses.

Cover. Cook on Low 4-6 hours.

Carnitas del Horno
4 lbs. beef, pork, or lamb roast (I used pork)
4 T olive oil
4 large garlic cloves
1 T salt
1 c dry white or red wine, water, or broth (I used red wine)
2 large onions
2 bell peppers (I used a red and a yellow)
small tortillas

Rinse meat and trim excess fat, pat dry. Heat 2 T oil in large skillet and brown meat, on all sides (about 10 min.)

Grind 3 garlic cloves and salt into a paste with mortar and pestle. Rub all over meat. Put in slow cooker and add wine. Cover and cook 8 to 10 hours until meat falls apart easily with a fork.

Heat remaining oil in skillet over medium heat. Slice onions and peppers and saute until the onion is soft and both are carmelized (about 8 to 10 min.). Mince remaining garlic clove and add to onions and peppers.

Add meat and cook until slightly browned. Serve with warm tortillas and salsa (I used fresh pico de gallo).

***My husband and thought that next time we'd add cooked white jasmine rice and black beans and use bigger tortillas to make it more like a burrito***

Artichoke Dip with a Kick

9oz package frozen artichoke hearts
8oz marinated artichokes, drained
4 scallions, chopped
1/2 tsp tabasco, or to taste
8 oz cream cheese, brought to room temp.
1/2 c parmesan cheese, shredded
1 Tablespoon fresh lemon juice
salt to taste

Coarsely chop the artichokes. Combine all ingredients. Spread into a lightly oiled crockpot (use a 1 1/2-2 quart crockpot). Cook on low for 2 hours.

Chicken Tetrazzini

3-4 chicken breasts, cubed
2 cans (10 oz each) cream of chicken soup
2 cans (10 oz each) cream of broccoli soup
garlic salt (sprinkle over the chicken)
lemon-pepper seasoning (sprinkle over the chicken)

put all in the the crockpot and cook on low 6-8 hours or on high for 2-4. Serve over cooked rice or noodles.

So You Forgot to Defrost

6 frozen chicken breasts
2 10 3/4 oz cans cream of chicken soup (I used one cream of chicken and one cream of mushroom with roasted garlic and it was pretty good like that)
4 oz can sliced mushrooms or 1/2 c. sliced fresh mushrooms
1/4 tsp pepper
3/4 tsp salt

Place frozen chicken in crockpot. Mix together soup, mushrooms, salt and pepper and pour over chicken. Cover. Cook on low 10-12 hours. Serve over rice or pasta.

Crockpot Sausage Chili
1 lb. Bob Evans Original or Zesty Hot Roll Sausage
1 Pkg. 12.5oz-Chili Seasoning Mix
1 Can 15.5oz Light Red Kidney Beans/
Including Liquid
1 Can 14.5oz Diced Tomatoes with Onion
Including Liquid

Place bite size pieces of uncooked sausage into Crockpot. Add Chili Seasoning, Beans, and Tomatoes. Stir gently, Cover and cook on low 4-6 hours - Stir before serving.

Serve topped with Shredded Cheddar Cheese and Sour Cream...YUM!

Hint: I cook mine for 8-10 hours which seems to give it a thicker base. Also the Zesty Sausage offers more flavor and less grease.




Pork Tenderloin with Mushroom Gravy
1.5-2 lb Pork Tenderloin
2 Cans Cream of Mushroom soup - UNDILUTED
1/2 Cup Fresh Mushrooms
Misc. Spices:
Ground Black Pepper
Garlic Salt
Italian Seasoning

Rinse Tenderloin, and rub with above Misc. spices, Place in Crockpot, Pour 2 Cans of undiluted soup over Tenderloin, Cook on low 8-10 hours. Half way through the cooking time add Mushrooms.

Serve with Noodles or Rice

Hint: You can use other types of Creamed soups - whatever your fancy is.. go for it. You can also cook this on High if pressed for time, the longer it cooks the more tender it will become.

1 can regular coke or pepsi

place roast in crockpot, add soups, pour soda over that, cover and cook....ymmy...

Crock Pot Chili

1 1/2 lbs lean ground beef
2 cups chopped onion
1 chopped green pepper
2 cloves garlic minced
2 15oz cans dark red kidney beans
1 15oz can tomato sauce
2 14 1/2 oz cans diced tomatoes undrained
1 teaspoon basil
black pepper to taste
chili powder to taste

Brown beef,onion,pepper & garlic. Drain fat.
In crockpot add remaining ingredients & beef mixture. Cover & cook on low for 8-10 hours( on high 4-6 hours).

Crockpot Chicken and Rice Casserole Crockpot

4 lg. chicken breasts
1 sm. can cream of chicken soup
1 sm. can cream of celery soup
1 sm. can cream of mushroom soup
1/2 c. diced celery
1 c. minute rice
Mix in crockpot the 3 cans of soup and rice. Place the chicken on top of the mixture, then add
the diced celery. Cook for 3 hours on high or 4 hours on low. Makes 4 servings. More rice,
about 1/2 cup, and 2 other chicken breasts may be added to make 6 servings.
